If you haven't tried a Jackfruit recipe before, we love to use it which gives a meaty and shredded look. It's got rich, deep flavors, great texture and it’s really healthy.
Ingredients
For Spice mix
2 tsp chilli powder
1⁄2 tsp salt
2 tsp ground cumin
1 tsp dried oregano
1⁄4 tsp ground allspice
1⁄4 tsp ground cinnamon
For Chilli
1 tin jackfruit
2 red onions, finely chopped
1 celery stick, sliced
1 carrot, diced
1 red pepper
1 yellow pepper
2 fresh red chillies
1 tin kidney beans
50g walnuts
1 tbsp olive oil
pinch of salt
2 tomatoes
1 bay leaf
2 tsp soy sauce
100ml water
Method
Mix all the spice mix ingredients together in a small bowl. Put the jackfruit on a chopping board and use two forks to pull it apart into pieces. Transfer the jackfruit pieces to the lined baking tray. Drizzle with a little olive oil, sprinkle over half of the spice mix and mix to coat. Roast the jackfruit for 20–30 minutes(400 F)
Heat the olive oil in the large saucepan over a medium heat. Add the onions and stir for 3–4 minutes. Add the celery and carrot and cook for 3 minutes. Add the remaining spice mix and stir for few seconds. Add the peppers and chilies and stir for 3–4 minutes.
Add the walnuts, roasted jackfruit, tomatoes, bay leaf, kidney beans, soy sauce and the water to the pan. Turn the heat down and leave the chilli to simmer and thicken for 12–15 minutes.
Serve the chilli over the rice with a small side salad
