Eggless Non-alcoholic Christmas fruit cake

Growing up - we were always fascinated by the Christmas cakes our friends would bring on the eve,


Today we will bake an Eggless Christmas fruit cake - it tastes just as good as it looks

Yummy! hope you enjoy this too



Ingredients

  • 2 cups all purpose flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 cup + 1tbsp hot water, divided

  • 1 cup white granulated sugar

  • 1/2 cup vegetable oil

  • 1/2 cup sour yogurt sour cream

  • 1/2 tsp vanilla extract

  • 1/2 tsp cinnamon powder

  • 1/2 tsp nutmeg powder

  • 1/2 cup dried fruit(apricot, fig, cranberries, glace cherries)

  • 1/2 cup nuts(cashews, almonds and walnuts)

Vanilla Glaze

  • 1/2 cup confectioner's sugar/powered sugar

  • 1 tbsp soft butter

  • 1 tbsp milk

  • 1/4 tsp vanilla extract

Method

  • Lightly grease the base of a Bundt pan and dust it with plain flour and tap to remove excess.

  • In a large bowl, assemble the dry ingredients- the flour, baking powder and baking soda and sieve together to prevent lumps

  • Preheat the oven to 350 F

  • In a another bowl or bowl of a stand mixer, pour the hot water and sugar and blend until the sugar partly melts

  • Quickly stir in the oil and yogurt and mix well

  • Now stir in the dry ingredients into the wet ingredients, add the vanilla extract, cinnamon and nutmeg powder and mix well for about 3 to 4 minutes

  • Add the dried fruits and nuts and mix again


  • Lastly, add the remaining 1 tbsp of hot water and mix well

  • Bake in the middle rack of the oven. After 10 minutes lower the heat to 300F and bake for 45-50 minutes until skewer comes out clean

  • Allow the cake to cool in the pan for 10 minutes and then transfer it to a cooling rack


For vanilla Glaze

  • Mix all the ingredients together and spoon over the cake

  • Serve and Enjoy!

Note

  • you can use two 6'' round pan

  • you can use brown sugar instead of white or 50% brown and 50% white sugar
