Focaccia or flat bread is our favorite when it comes to Italian dinner evenings - I have heard in many places Italian restaurants serve bread just to stop hungry customers from creating a scene lol -
helping your hunger pangs or not Focaccia is a great addition to our flatbread collection., it's versatile and easy to bake hope you enjoy too
Ingredients
4 cups all purpose flour
2 tsp sugar
2 1/4 tsp instant dry yeast
1 1/2 tsp salt
1 1/3 cups warm water
1 tbsp olive oil
Toppings (optional)
Tomatoes
black olives
rosemary dried
2 tsp sea salt
1 tsp chilli powder
Method
In a large bowl, mix together the flour, dry yeast and salt
Pour in the water and olive oil then mix everything together with a spoon until the mixture comes together. Now transfer to a platform.
Knead with your hands for about 5-10 minutes until smooth dough forms.
If the dough is too sticky add more flour but try to use less flour for soft focaccia.
Shape the dough to round shape and place it in a lightly oiled bowl. Cover the bowl with a towel and place it in a warm location.
let it rise for 1 hour or until the dough has doubled in size.
Place the dough on to a lightly floured surface and roll it out into a rectangle it should be 1/2 inch thick.
Place it in a oiled baking tin/sheet and stretch it into the corners with your hands. Cover the tin/sheet , and let it sit for another 20 minutes.
Preheat the oven to 400 deg F .
Press deep holes into the focaccia with the back of a wooden spoon. Then press the tomatoes, olives and dried rosemary into the bread.
Now drizzle 1-2 tbsp of olive oil evenly all over the top of the dough, sprinkle with salt and chilli powder.
Bake for 20 minutes, until slightly golden and cooked through.
Slice and serve it with a drizzle of olive oil.
