Gochujang Spaghetti

This dish is remarkably flavorful its really healthy recipe but an easy veggie dish too! Great choice for a quick meal.


Ingredients

For Paste

  • 2 1/2 tbsp Soy sauce/red miso paste

  • 1 1/2 tbsp maple syrup

  • 1/2 tbsp red chilli powder

  • 1/2 tbsp smoked paprika

  • 11/2 tbsp water

  • 2 tsp Sunflower oil

For main dish

  • 1 tbsp Sunflower oil

  • 200g broccoli

  • 2 bell peppers

  • 1 large carrot

  • 2 tbsp sesame seeds

  • 150g dry Spaghetti (we used whole wheat)

Method

  • Mix the Soy sauce, maple syrup, red chilli powder, smoked paprika, water and oil into a bowl and mix until smooth

  • Now, cut the broccoli lengthwise into strips

  • Peel the carrot and cut into lengthwise and slice the bell peppers

  • Now warm 1 tbsp olive oil in a wok over a medium heat and add the paste and stir for 30 seconds until fragrant

  • In a pot, Cook the Spaghettis according to packet instructions, ensuring you don’t overcook them


  • Add the broccoli and red peppers to the wok and toss for 2 minutes until slightly tender and add the carrots and toss for 30 seconds to combine if it looks dry, add a splash of water to loosen

  • Add the spaghetti and toss to combine


  • Sprinkle over the spring onions, sesame seeds and serve
