Meaty Meatless Vegan Steak

Vegan and Vegetarians are always asked the question - if you want all your dishes to taste like meat why not just eat meat -

Us vegans are all about cruelty free and show the path forward to our brethren


Vegan Steak - though sounds like an oxymoron it's much healthier and tastier than any other meatless dish we have made in the past





Ingredients

Steak

1 1/2 cups vital wheat gluten flour

2 tbsp tomato puree

2 tbsp teriyaki sauce

1 tbsp chilli powder

1/2 tsp salt

1/2 tsp ground black pepper

90ml water

2 tbsp oil


Marinade

2 tbsp olive oil

1 tbsp teriyaki sauce

1 tbsp maple syrup


Red velvet sauce

1 cup finely chopped onion

1 1/2 tbsp dried tarragon

1 tsp capers, finely chopped

1 1/2 tbsp olive oil

1 cup water

1 tsp soy sauce

1 tsp ground black pepper

1 tsp salt

1/4 cup canned sliced beetroot


Method


For Steak

  • Cook 1/4 cup French green lentils in 1 cup of water for 20-25 minutes. Drain excess water


  • Add all the ingredients, apart from water and oil to the food processor and pulse to combine.


  • Add water and oil, pulse , scraping down the sides

  • Transfer the mixture to a Kneading surface and knead for about 5-10 minutes(mind you it is hard)

  • bring it together into a tight ball

  • Roll the mixture into a rough oblong shape and cut into 4 even slices


  • Flatten each slice with your hand so they are roughly 1cm thick and steak shaped


  • cook the steak in a pan of boiling water with salt for 20 minutes


  • Take the steak out , drain and leave to cool for 5 minutes.


For Marinade

  • Add the ingredients for the marinade into a large zip lock bag


  • Add the steaks in the bag and roll them around in the marinade so they are well marinated.

  • Leave to marinate for 20 minutes



To cook Steak

  • Heat a splash of oil in a pan over a medium high heat

  • Add the steaks and pour over any remaining marinade


  • cook for 3-5 minutes on each side until they are well browned but still tender

  • rest for a minute or two before serving with chips and sauce.


For Sauce

  • Heat a teaspoon of olive oil in a pan over a medium heat

  • Add the onion and cook for about 4 minutes, until soft

  • Reduce the heat to simmer and add the water , let it boil for 3-4 minutes

  • Now add all the remaining ingredients and bring it to boil for 10 minutes until the sauce has reduced and thickened


  • Remove the pan from the stove and set aside to cool to room temperature

  • Now in a blender, grind it to a smooth paste

  • pour it in a jar and ready to serve.
