Sweet and sour tofu pineapple curry(under 20 min)

This is a delicious and simple dinner idea.

If you're looking for a quick recipe or to experiment- this is a great one to try!


Ingredients

  • 4 tbsp. corn flour

  • 1 tbsp. red chili powder

  • 2 cup firm tofu, drained-chopped into cubes

  • 5 tbsp. vegetable oil

  • 2 cups pineapple juice with chunks (I used canned)

  • 1/4 cup rice vinegar

  • 1/4 cup tomato ketchup

  • 1/4 cup sugar

  • 1 small onion chopped

  • 1/4 cup green bell pepper, diced

  • 1/2 tsp red chili flakes

  • 1/2 tsp salt

Method

  • In a small bowl, mix the corn flour, red chili powder. Toss the chopped firm tofu until it’s all well-coated.

  • In a pan add few tbsp. of oil and pour coated tofu and fry until it starts to crisp up slightly. Then put it in a bowl and leave to the side.


  • In a pan, add the pineapple juice, rice vinegar, ketchup and sugar, and stir well until you reach thick sauce consistency

  • In a large pan, add the oil, red onion, ginger, green pepper, red chili flakes and salt cook until softened.

  • Now add the sweet and sour pineapple sauce with pineapple chunks and bring it to a boil for a minute or two


  • Add the crispy tofu stir it and serve with the rice


  • Enjoy!
