This is a delicious and simple dinner idea.

Ingredients
4 tbsp. corn flour
1 tbsp. red chili powder
2 cup firm tofu, drained-chopped into cubes
5 tbsp. vegetable oil
2 cups pineapple juice with chunks (I used canned)
1/4 cup rice vinegar
1/4 cup tomato ketchup
1/4 cup sugar
1 small onion chopped
1/4 cup green bell pepper, diced
1/2 tsp red chili flakes
1/2 tsp salt
Method
In a small bowl, mix the corn flour, red chili powder. Toss the chopped firm tofu until it’s all well-coated.
In a pan add few tbsp. of oil and pour coated tofu and fry until it starts to crisp up slightly. Then put it in a bowl and leave to the side.
In a pan, add the pineapple juice, rice vinegar, ketchup and sugar, and stir well until you reach thick sauce consistency
In a large pan, add the oil, red onion, ginger, green pepper, red chili flakes and salt cook until softened.
Now add the sweet and sour pineapple sauce with pineapple chunks and bring it to a boil for a minute or two
Add the crispy tofu stir it and serve with the rice
