Tomato Basil Soup

We love tomato soup. It’s our go-to comfort soup in sickness and in health, this is really simple recipe and super delicious


Ingredients

  • 4-5 tomatoes, halved

  • 1/8 cup extra-virgin olive oil

  • 1/2 cup carrots, chopped

  • 1 1/2 cups water

  • 1/2 tbsp balsamic vinegar

  • 1 tsp thyme leaves

  • 1/2 cup basil leaves

  • sea salt and ground pepper

Method

  • Heat a drizzle of oil in a pan over a medium heat and add in the tomatoes to it. sprinkle with salt and roast it for 5-6 minutes until the edges just starts to shrivel. Set aside

  • Heat a few drops of oil to a pan and add the carrots and 1/4tsp salt and cook until soft for about 4-5 minutes

  • Noe stir in the tomatoes, water, vinegar, and thyme leaves. and simmer for 12-15 minutes

  • Let it cool slightly and blend it until smooth. Now add the basil leaves until combined.


  • Garnish the soup with basil leaves and serve it with crusty bread.
