Veggie packed Red Lentil Bolognese

Ingredients

  • 2-3 tbsp olive oil

  • 1 cup chopped onion

  • 2 carrots, finely diced

  • 1/2 stick leek, chopped half-moon

  • 2 cups tomato, finely chopped

  • 2 tbsp tomato puree

  • 2 tbsp tomato ketchup

  • 2 tbsp basil(dried or fresh)

  • 1 tsp Italian herbs

  • 1 tsp sugar

  • 1 tsp salt

  • 1 tsp chilli flakes

  • 1 cup red lentils, uncooked

  • 11/2 cup water

To Serve

Method

  • Heat a oil in a pan over medium heat.

  • Add the chopped onion, carrots and leek and sauté for 5 minutes until softened.


  • Now add the chopped tomatoes, ketchup, tomato puree, basil, herbs, sugar, salt and chilli flakes. stir until combined.


  • Add the lentils and water as mentioned to the pan and stir well. Bring it to a boil and lower the heat for 20 minutes until cooked. Keep stirring in-between to avoid burn.


  • If it gets too thick add another 1/4 cup water.

  • The lentils should be tender . Serve over spaghetti or any other pasta of your choice

  • Sprinkle parmesan cheese and enjoy!
