Ingredients
2-3 tbsp olive oil
1 cup chopped onion
2 carrots, finely diced
1/2 stick leek, chopped half-moon
2 cups tomato, finely chopped
2 tbsp tomato puree
2 tbsp tomato ketchup
2 tbsp basil(dried or fresh)
1 tsp Italian herbs
1 tsp sugar
1 tsp salt
1 tsp chilli flakes
1 cup red lentils, uncooked
11/2 cup water
To Serve
parmesan cheese, grated
Method
Heat a oil in a pan over medium heat.
Add the chopped onion, carrots and leek and sauté for 5 minutes until softened.
Now add the chopped tomatoes, ketchup, tomato puree, basil, herbs, sugar, salt and chilli flakes. stir until combined.
Add the lentils and water as mentioned to the pan and stir well. Bring it to a boil and lower the heat for 20 minutes until cooked. Keep stirring in-between to avoid burn.
If it gets too thick add another 1/4 cup water.
The lentils should be tender . Serve over spaghetti or any other pasta of your choice
Sprinkle parmesan cheese and enjoy!
